Summary
Probiotic yoghurt can be a cheap and effective tool to improve the health of people in
developing countries. The Yoba for Life foundation aims to spread probiotics through local
yoghurt factories in Africa, to prevent diarrheal and contribute to a better health status in
entire communities. Are you interested in this innovative concept, and do you have
experience and affinity with food technology and developing countries? Then you can help
us design and implement the pilot project in Uganda. In this challenging six month
internship, you will work with a small factory in rural Uganda to introduce and evaluate
Africa’s first probiotic yoghurt.
Introduction
Probiotic yoghurts are sold at a large scale in the Western world and claim to contribute to
maintaining the intestinal health of consumers. However, in developing countries probiotic
yogurts with proven health benefits are hardly or not available. It may be argued that, in
contrast to the Western world, the (intestinal) health of the people living in developing
countries, in particular children, is not always well balanced as a result of limited access to
good nutrition, and an almost constant exposure to pathogenic microorganisms. This may
impact the way children perform at school or how men and women earn their daily income.
The Yoba for Life concept enables local communities to produce and sell the probiotic
Yoba yogurt, and in this way to improve the health and wealth of people where self-
employment is the core of existence.
The Yoba for Life Foundation, in cooperation with the Dutch NGO SYPO, is looking for
volunteers who want to contribute to the implementation of the Yoba for Life concept and
improving the health and economic situation of people in Uganda.

Project Tasks
1. Develop a production method for probiotic Yoba yoghurt drink in collaboration with
the management of local yoghurt factories, Life Dairy Ltd., in Central Uganda
(Mukono district or Kampala).
In order to decide about the right production methods for the probiotic Yoba drink in
the local factory, the following procedures will be investigated:
a. To use Yoba starter culture for fermentation of milk and make a technical
and sensory evaluation related to fermentation time, taste and texture of the
final product
b. To mix the fermented Yoba milk one-to-one with the existing yoghurt and
make a sensory evaluation related to taste and texture of the final product.
Note that the probiotic starter culture and protocols will be supplied by the Yoba for
Life Foundation.
2. Set up a marketing study to evaluate consumer needs and related communication,
promotion, pricing, of probiotic Yoba yogurt drink in collaboration with management
of the local factory.
The introduction of a health-promoting project requires some evaluation of the
related consumer needs and perception. By conducting a small marketing study in
the area, know-how will be generated on how the Yoba drink can be best promoted
and differentiated from existing yoghurts and healthy products.
3. Contribute to the design and production of new packaging for the Yoba drink
together with management of the local factory.
A new packaging will be made in order to clearly emphasise the presence of Yoba
inside the yoghurt and to str
ess the drink’s health benefits.
4. Evaluate the existing distribution and selling points of the new Yoba drink.
5. Facilitate a good relationship with the Dairy Development Authority
The DDA is the controlling authority regarding safety and quality of dairy products
in Uganda. In order to assure the food safety and quality of the product and to
enable further future expansion of Yoba for Life in Uganda it is important to
establish a good relationship with the DDA and guarantee that Yoba is produced
according to the norms set by DDA.
6. Recruiting and training of a local person to lead future production and marketing of
Yoba in collaboration with management of the local factory.
It is inherent to the Yoba for Life concept to work as much as possible with people
from the region.
Preparation and reporting
Before departure the project leader will be briefed by the Yoba for Life Foundation about
details of the project. In addition, the project leader will have every two weeks an update
meeting (Skype conference) with the foundation members.
Local support during the internship will be facilitated by SYPO members in Mukono.

Experience with project management
Motivated
Experience abroad/in Africa
Academic or similar background
Excellent in communication and networking skills.
Technical know-how and affinity with food microbiology
An open-minded and flexible team worker who can drive the project and knows
how to take initiatives
Fluent in English
Ability and willingness to work in challenging and basic circumstances in a very
rural area
Conditions
You will work on a voluntary basis with support of the Yoba for Life Foundation and SYPO
Foundation. A daily fee of 10 USD will be provided by Yoba for Life to contribute to costs
for living. In case the project is successfully executed your airplane ticket will be refunded
up to a maximum of 1200 USD*.
Project related expenses required to successfully execute the project will be compensated
by the Yoba for Life Foundation on a case by case basis.
A personal laptop is required. Access to internet is available through the mobile telephony
network by means of a ‘dongle’
.
Working and living conditions in this project are challenging. Often the local factory staff,
including management, has no technical education and lack written or spoken proficiency
in English. Production methods in the small-scale yoghurt factories can be primitive, and
the introduction of probiotics in the daily routine will require improvisation. The
accommodation will be in (simple) guesthouses and can be facilitated for you by
Counterpart Travels, www.counterparttravels.com. Basic costs of living may vary between
8-15 USD/day depending on the location of the guest houses.
Location and context
During your project you will build further on the milestones set by Tiziana Pedrelli, MSc,
who started a Yoba internship in March 2011 at a small yoghurt factory in Kikwayi. This
small village is not far from the larger village Nkokonjeru, in central Uganda. All yoghurt
(some 150 liters/day) is sold within the Mukono and Buikwe districts. From Kikwayi, Lake
Victoria is a 45 minute walk. The area is very green and lush, with subsistence farming as
the main economic activity.
