Determination of Volatile (Aroma) Compounds in Some Honeys
In this study, volatile aroma compounds found in 8 honey samples which were obtained form different cities in Turkey were investigated. 7 of these honey samples were monofloral and 1 of them was polifloral. These honeys are; citrus, chestnut, thyme, pine, astragalus (geven), acacia, flower honey and cotton honey respectively.
To determine the aroma compounds in these honeys, firstly aroma extraction was applied. Aroma extraction is a two step process. First step is (solvent) pre-extraction. Second step is Simultaneous Distillation-Extraction (SDE) process which was performed with micro extractor. Finally extracts were analysed qualitatively in GC/MS to determine the aroma compounds.
As result of the analysis, most of the obtained compounds were belong to the hydrocarbon, alcohol, phenol, aldehyde and ketone groups.
