The relevance of the work: It is now known that there is a close link between nutrition and health, so probiotic microorganisms have been used for more than 100 years to prevent and treat various human diseases. Research on probiotics has been on the rise recently, which has led to significant advances in our understanding of these microorganisms. The importance of probiotics is logical in both directions, in their use in the production of industrial products, and in their beneficial effects on human health. In this regard, probiotic microorganisms are widely added to yogurts and other fermented dairy products, which are leaders among functional foods, accounting for about 65% of the food market.
Object of the master’s dissertation: Object of research - Imported and domestically produced, fermented dairy products; strains isolated from various plants; Dairy products from different regions of Uzbekistan.
The purpose of the master’s dissertation: To study the antioxidant activity of fermented dairy products and lactobacilli isolated from various plants and to create a set of probiotic active cultures.
Tasks of the master’s dissertation: Separation from biological material and identification of lactobacilli by cultural, morphological and biochemical characteristics, as well as genotyping with 16S rRNA; Study of antioxidant properties of lactobacilli (total antioxidant activity, antioxidant ability); To determine the effect of inulin and lactolose on the antioxidant activity of lactobacilli.
Scientific novelty of the master’s dissertation (results): The research will study the antioxidant activity of local strains of lactobacillus and create a collection of strains with high antioxidant properties. A scientific basis for the application of high antioxidant strains in the production of probiotic products will be developed.
